With Valentine's Day quickly approaching, we are bombarded by different symbols of love. Love is one of the most beautiful emotions of the human experience but it still remains a mystery. Every relationship serves as a teaching vehicle for the soul’s evolution. The way we learn to express and actualize unconditional love is in our relationships. Unconditional love is known as affection without any limitations, or love without conditions. 

The only way to change your circumstances is to change yourself, and we do not always feel brimming with love. Life is constantly throwing many challenges our way. Many times we just act out of fear instead of love: perhaps we have behaved badly towards someone to cause them pain; find ourselves unable to express our authentic feelings or not fulfilling all our commitments. Take your life into your own hands and respond creatively.

Start to celebrate love and happiness within yourself and all others. At every moment each of us is confronted with an important choice. Will you reach out in fear or love? Challenge your own behavior and commit yourself to love wholeheartedly. 

This month open up within and accept greater love, peace, and contentment!

Self-esteem is based on our self-belief, and when we are going through a rough spot it’s often difficult to maintain this frequency. Belief is strong energy. When it feels impossible to love yourself, then continue to practice. It is important to be clear that love is much more than feelings of affection. Begin each day and interact with loved ones from the viewpoint of unconditional acceptance. Make a daily decision to offer them love and to create a space of calmness rooted in love with them. Take steps every day to express both affection and respect for your loved ones knowing that both lead to peace and calmness. Practice believing that you are amazing, important, creative, deserving, and loved because you are!

One of my all-time favorite vegan desserts!

  • ½ cup plus 2 tablespoons creamy peanut butter
  • ¼ cup plus 1 tablespoon melted coconut oil
  • ¼ cup plus 1 tablespoon maple syrup
  • 2 teaspoons vanilla extract
  • Heaping ½ teaspoon sea salt
  • 2½ cups almond flour
  • 2½ tablespoons maca powder (optional)
  • 1 cup vegan chocolate chips
  • 1½ cups walnuts
  • 2 tablespoons cacao or cocoa powder
  • ¼ teaspoon sea salt
  • 10 soft Medjool dates
  • 2 tablespoons water
  • Flaky sea salt for sprinkling on top (optional)
  1. Line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, stir together the peanut butter, coconut oil, maple syrup, vanilla, and salt until combined. Add the almond flour and maca, if using, and stir to combine (the mixture will be thick). Fold in the chocolate chips and press into the pan. Place in the freezer so that it firms up a bit while making the next layer.
  3. In a small food processor, pulse the walnuts, cacao powder, and sea salt until the walnuts are well chopped. Add the dates and pulse to combine, adding 2 tablespoons of water if the blade gets stuck. Process until smooth, then spread onto the cookie layer. Sprinkle with sea salt if desired. Freeze for 30 minutes (this will help them firm up, making them easier to cut). Remove and slice into bars. Store remaining bars in the fridge.
